May 5 (Monday) Dallas Bono Demonstration: 6:30 to 8:30 pm $40.00 Eat Like a Chef This is not a class for the faint of heart. You will be learning Escoffier inspired techniques for roasting and braising those parts that may get overlooked, but are incredible in flavor and texture. These are the menu items that chefs order when they go out to eat. The menu starts with a Chicken Liver Pate with Cognac and Chanterelles. Next, watch as Dallas makes Roasted Bone Marrow Scented with Herbs and Flavored with Truffled Fleur de Sel served with toast, Braised Sweetbreads with Caramelized Leeks and Figs, Pork Trotters and Neck Bones in Sweet Chili Sauce, and a Real Shrimp Bisque infused with Sherry. End the night with a wonderful Chocolate Bread Pudding for dessert.
May 6 (Tuesday) Nancy Horvath Demonstration: 6:30 to 8:30 pm $35.00 Playing with Puff Pastry Creating foods using puff pastry will dress up any course and make for great entertaining or a family night dinner. Learn how easy it is to work with puff pastry to create a Baked Brie en Croute and individual Chicken Wellingtons. Dallas is making three different Bruschettas (Tomato Basil, Tuscan Cannelini Bean and Pancetta Topping with Aged Balsamic and Grilled Smelt with Lemon and Thyme). Homemade Foccacia and a Calarari Fritti with Basil Aioli are sure to become favorites for entertaining. Experience Spring with a cold Melon Soup with Crispy Prosciutto and Parmesan Crisps, Grilled Vegetables, Ensalata Caprese, and Gorganzola-Stuffed Sicilian Olives. He is making an appetizer of Malaysian Crispy Tofu, a delightfully fragrant Soy Sauce Chicken Breast ('kicap ayam'), and Stir-fried Broccoli with Shrimp and Black Mushrooms.
